ORANGE CREAMSICLE CHIA PUDDING
The first time I attempted to make chia pudding, it tasted like snot. My husband likened it to another bodily fluid that is too x- rated to mention here 😳. I was determined to make it work, because it is so good for you, so I came up with this Orange Creamsicle Chia Pudding recipe that is, dare I say it, yummy??
Why is chia pudding so good for you? It is high in fiber, which is good for blood sugar control, cholesterol levels and gut health. It is also high in protein, which is good for building lean muscle, and it contains healthy fats which help keep you feeling full.
This orange creamsicle Chia pudding has become my favorite way to break my fast at noon, since doing the FWTFL program. It is also a great snack to curb your sweet tooth in between meals. I find chia pudding to be kind of like tofu, it has no real taste of its own and will take on any flavors you choose to add. I make a batch, stick it in the fridge and have breakfast ready all week. I alternate between this and a smoothie to keep life from getting boring.The citrus really helps in giving this flavor and the banana adds a nice creamy texture to it. I hope you like it as much as I do.
ORANGE CREAMSICLE CHIA PUDDING
You need:
Coconut or Almond Milk
Chia seeds
Vanilla extract
Juice from one orange (it is important to use fresh orange juice to keep the sugar content down)
Tangerine and banana
How to:
Mix 1/4 cup of chia seeds with 3/4 cups of coconut or almond milk milk and stir.
Add a splash of vanilla
Add zest and juice of 1 orange
Add 1 teaspoon of honey or maple syrup.
Stir again and let sit overnight
When ready to eat, scoop 1/2 cup of chia pudding into a bowl and top with Tangerine and banana slices. You can also add a bit of granola. Enjoy!
