Happy 4th of July!!! 🇺🇸 I am definitely not adulting today and neither should you. If you didn’t already know this, Summer is my absolute favorite season and I am a sucker for a good summer cocktail. In this sweltering heat, there is truly nothing better than a big glass of this frozen Rosé summer cocktail. It is so refreshing, fun, and pretty to look at. I just recently started making them and I am obsessed. They also make great party favors and are perfect for your 4th of July BBQ. I like to put them in these bags and add a straw for “adult juice boxes”. Total hit at parties and a great icebreaker. They are super simple to make, especially if you make the strawberry simple syrup in advance. It can be stored in the fridge and is enough for a couple of batches.

Frozen Rosé Summer Cocktail
INGREDIENTS:
1 750 ml bottle rosé ( choose a heavy, dry rosé that looks darker than the others )
½ cup sugar
½ cup water
8 ounces strawberries, hulled, quartered
2½ ounces fresh lemon juice
1 cup ice
HOW TO:
Pour the wine into a large sheet pan. (I find it easiest to put the sheet pan into the freezer and make sure it is level before pouring the rosé into the pan.)
Freeze for at least 6 hours.
Bring the water to a boil. Add the sugar, reduce the heat to low, and stir until all of the sugar is dissolved.
Add the strawberries and stir. Let that mixture sit for around 30 minutes.
Strain the strawberry syrup through a sieve and let cool. That’s it. You can eat the strawberries later over vanilla ice cream. Yummy!!
Add 3 ounces of strawberry syrup, 2½ ounces lemon juice, 1 cup of ice, and the frozen wine to a blender and blend until smooth. Serve!
Cheers to Summer and I hope you are spending today relaxing, enjoying good food and good company.
XO,
