
Happy Friday! This has been the longest week ever. This was the last week before summer vacation and the kids have counted down every.single.day. They have made so many plans and are excited to get them started.
I usually have a special treat waiting for them on Friday after school to celebrate the weekend. I decided to make this one extra special, since it marks the beginning of summer. I made the best chocolate chip cookies ever, from scratch and they have a special ingredient that sets them apart.Even the hubby, who doesn’t usually have a sweet tooth, loves them. Fair warning, you won’t eat just one and they will became fast favorites in your house.
I will make them into ice cream sandwiches to mark the occasion. This recipe makes a larger batch, so there will be plenty to share with friends. This is also a great Father’s Day dessert and if you are still trying to figure out what to make, my current favorite Summer Salad makes a great side dish.

The BEST Chocolate Chip Cookie Ever
INGREDIENTS:
1 cup white sugar
1 cup brown sugar (packed down)
1 cup butter (soften)
2 eggs
1 teaspoon vanilla
2 cups flour
¼ teaspoon salt
½ teaspoon baking powder
1 teaspoon baking soda
2 cups rolled oats
2 cups Rice Krispie Cereal
1 cup chocolate chips
HOW-TO:
Preheat your oven to 350 degrees.
Cream together the sugars and butter until light and fluffy.
Add in the eggs and vanilla and beat well.
Add the flour, salt, baking powder and baking soda and mix.
Add in the oats, cereal and chocolate chips and gently mix. This step is a little bit of a pain, but worth it.
Scoop onto a lined baking sheet. Add another scoop fo a larger cookie and/or ice cream sandwiches.
Bake for about 10 minutes, depending on size.
