If you are hanging at home for the upcoming Memorial Day weekend and are planning a BBQ, I have the perfect summer salad for you. I made it the other week and it was so yummy and held up really well. I ate it for lunch all week long. I added some grilled chicken and it was perfect! You can make it for a summery dinner or bring it to a party. It can be made a day ahead and I actually prefer it that way. I feel like it gives the flavors a chance to really meld together. Just make sure to toss it again right before serving. The Perfect Summer Salad
- 1 can of chickpeas, drained and rinsed
- 1 cucumber, washed and cubed
- 1 pint of grape tomates, quartered
- 1 small onion chopped, red or yellow
- a bunch of chopped parsley
- chopped fresh thyme
- 1 block of fresh feta, crumbled
- 1/4 cup olive oil
- 2 tablespoons red wine vinegar
- 1/2 teaspoon cumin
- salt & pepper to taste
Combine oil, vinegar and cumin in a big bowl. Throw in all other ingredients and toss to coat. Season with salt and pepper to taste. Cover with plastic wrap and let sit a few hours to let the flavors meld together, preferably overnight. Toss again and add more salt and pepper, if necessary. Give it another good toss before serving. Enjoy!
