THE BEST HEALTHY BANANA BREAD RECIPE

Happy Friday! Who’s excited for the weekend?  🙋‍♀️ My kids are actually home from school today so our weekend officially started yesterday. It is like a hurricane outside, with 60 mile per hour winds, but we are having fun staying in our jammies and watching movies.  I have my favorite banana bread in the oven and we can not wait for it to be done so we can eat it warm, slathered with butter. It is the best, healthy banana bread recipe ever!!!

There is something magical about banana bread. It makes the whole house smell good and everybody loves it, even the hubby. This is hands-down my favorite banana bread recipe. I originally found it online (can’t remember where…), but have made it so many times that I know the recipe by heart. It is actually healthy, made with coconut oil, maple syrup and whole wheat flour, so it will stick with you, but it tastes just as indulgent as the bad-for-you kind. I let my kids eat this for breakfast and they think I am a pretty cool mom. (Sshhh….!!!) Why don’t you make it this weekend?  I promise you will love it.

THE BEST HEALTHY BANANA BREAD RECIPE

INGREDIENTS:

1 tsp Baking soda 1/2 tsp Cinnamon

1/2 tsp Salt

1 3/4 cups  Flour (you can use all whole wheat flour, but I find that to be a bit much, so I mix half regular and half whole wheat together)

3 very ripe, mashed bananas

2 eggs at room temperature

1/2 cup maple syrup

1/3 cup Coconut oil (melted), or good vegetable oil

1/4 cup Milk of choice or water

1 tsp Vanilla extract

mix-ins: chocolate chips, walnuts, whatever your heart desires

HOW TO MAKE IT:

Preheat oven to 325 degrees

Mix together all of the dry ingredients and fluff them up with a whisk.

Mix all of the wet ingredients together.

Pour flour into wet mixture and stir until just blended together. Lumps are fine.

If you are adding mix-ins, now is the time (we are a nut-free home)

Pour into a well greased loaf pan.

Bake for one hour, or until center is baked through. (test with a toothpick)
